Ingredients:
1 cup plus 2 tablespoons pancake/waffle
mix
¾ cup cold water
2 tablespoons vegetable oil
2 eggs
1 cup frozen blueberries
Homemade syrup
Method:
In a medium bowl combine pancake mix,
water, oil, and eggs until just moistened. Batter will be lumpy, don’t over
mix. Gently fold in the frozen blueberries. (If they aren’t frozen they get too
gooey and make that batter runny.) Cook on a greased, hot griddle or skillet
until golden brown on each side. Serve with homemade syrup. Enjoy!
