Ingredients:
1 cup uncooked long grain rice
5 cups water (divided)
½ cup milk
1 tablespoon vanilla
½ tablespoon cinnamon
2/3 cup sugar
Chopped pecans
Ice
Method:
Place rice and 4 cups water into a
blender. Blend until rice breaks up, 1-2 minutes. Let stand at room temperature
for at least 3 hours. Meanwhile in a small pot over medium high heat bring 1
cup water, sugar and cinnamon to a boil. Boil for 2-3 minutes or until sugar is
dissolved. Remove from heat and cool. Strain rice water into a pitcher. Discard
rice. Add the sugar mixture, vanilla and milk to the rice water. Refrigerate
until chilled. Serve over ice and sprinkle with chopped pecans. Enjoy!
