1 ¼ cups flour
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon cinnamon
1 ½ teaspoon pumpkin pie spice
1 cup milk
½ cup pumpkin puree
2 ounces cream cheese, softened
2 tablespoons oil
3 egg whites
Method:
In a medium bowl combine the flour,
sugar, baking powder, salt, cinnamon, and pumpkin pie spice. Set aside. In a
large bowl combine the milk, pumpkin, cream cheese, and oil. Mix well. Add in
the dry ingredients, mix until well combined. Set aside. In a medium bowl, whip
the eggs whites to a stiff peak using an electric mixer. Gently fold into
pancake batter. Cook on a hot griddle or skillet until golden on each side.
Serve with homemade syrup. Enjoy!
