Caramel Popcorn Balls


Ingredients: 
1 cup popcorn kernels
4 tablespoons oil
1 ½ cups honey roasted peanuts
3 cups brown sugar
1 cup light karo syrup
½ cup butter
1 can sweetened condensed milk

Method:
Pop the popcorn either using an air popper or on the stove in a large pot ½ cup at a time with 2 tablespoons of oil for each batch, cover and shake the pot so it doesn’t burn, remove from heat and continue to shake until the kernels are all popped. Put into a large bowl. Repeat with 2nd batch, set aside. In a medium sauce pot bring the brown sugar and karo syrup to a boil, constantly stirring so it doesn’t burn, add the butter, melt and bring back to a boil, add in the sweetened condensed milk, bring to a boil and continue to stir. Cool slightly. Add the peanuts into the popcorn and pour over the caramel, starting with half and using more as needed, you may not use all of the caramel. Cool slightly, spray you’re hands with cooking spray and form into balls. Repeat the spray a few times to keep from sticking. Place on parchment paper to set. Once the caramel is set, wrap each ball in plastic wrap or keep them in an air tight container. Enjoy!
