Crabmeat Dip


Ingredients:
8 ounces cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
Garlic salt
Onion powder
Dash Worcestershire sauce
Chili sauce
Crab meat
Crackers (for serving)

Method:
In a small bowl combine the cream cheese, mayo, and lemon juice, mix until smooth. Season with garlic salt, onion powder, and dash of Worcestershire, mix well. Spread mixture evenly onto a serving plate. Spoon over a couple spoonfuls of chili sauce and spread evenly over the cream cheese mixture. Cover with small pieces of crab meat, sprinkle with parsley if desired. Serve with crackers. Enjoy!

Tip: I usually use imitation crab meat, but occasionally I’ll splurge for real crab meat, do whatever you like!

Sweet & Sour Sauce




Ingredients:
¼ cup vinegar
1/8 cup ketchup
1/8 c water
6 tablespoons sugar
1 small can crushed pineapple (including juice)
Chopped tomatoes

Method:
Combine all ingredients in a medium saucepan and bring to a boil stirring occasionally. Be careful it splatters. Thicken with a cornstarch dissolved in water, stir constantly until desired thickness so it doesn’t burn careful as it will splatter. Serve over pasta, meatballs or use as a dip. Enjoy!

Tips: I usually 4 times the recipe when I make it, that makes the sugar 2 cups and use only ¾ cup of vinegar or it’s too overpowering. Use a large can of crushed pineapple. Amount of cornstarch is equal to amount of water when mixing, I usually make more than I need, just adding a little at a time until it’s as thick as I want it. When using it to dip in I make it thicker than when I use it for a sauce.

Hot Chocolate




Ingredients:
1 (12oz) can evaporated milk
1 ½ cups milk
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1 cup milk chocolate chips
¼ teaspoon vanilla extract

Method:
Combine the evaporated milk, milk, nutmeg, and cinnamon in a small pot. Heat the mixture to almost boiling (liquid will start to steam and you’ll be good to go), over medium high heat stirring constantly so it doesn’t burn. Reduce heat to low add in the chocolate chips. Whisk until chocolate is completely melted. Stir in the vanilla extract. Serve topped with marshmallows and additional chocolate chips if desired. Enjoy!
