Pumpkin Waffles




Ingredients:
2 ¼ cups flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
2 teaspoons pumpkin pie spice
½ teaspoon nutmeg
½ teaspoon cinnamon
½ cup brown sugar
2 eggs, separated
¼ cup sour cream
1 cup milk
¼ cup butter, melted
1 ½ cups pumpkin puree
Homemade Syrup
Whipped Cream Topping (recipe follows)
Chopped pecans

Method:
In a large bowl combine the flour, baking powder, baking soda, salt, pumpkin pie spice, nutmeg, and cinnamon, stir to combine. Set aside. In a separate bowl combine the brown sugar, egg yolks, sour cream, milk, melted butter and pumpkin puree, mix well. Combine with the dry ingredients. Set aside. In a separate bowl using an electric mixer beat the egg whites until stiff peaks form. Gently fold into the batter, until incorporated. Cook using a waffle iron until nicely golden brown. Serve with homemade syrup, whipped cream topping, and chopped pecans. Enjoy!

Whipped Cream Topping
1 package dream whip
½ cup milk
1 teaspoon vanilla
1 teaspoon pumpkin pie spice

In a medium bowl beat all ingredients together using an electric mixer until you reach stiff peaks. Enjoy!
